Breakfast at Fayme's in the Kitchen; Fig Jelly

Go to the market this weekend and get some of the last figs to make yourself fig jelly and have a wonderful brunch. Get figs that are deep, dark purple color, soft and plump and almost bursting open. Figs are beautiful fruits that just scream fall to me.
Enjoy on toasted bread with cheese or even with waffles!
What you need;
-Ripe figs
-Gelatine sugar (to make jellies)
-Balsamic vinegar (optional)
-Onions (optional, for a more savory bite)

1. Cut the figs (and onions) in little chunks and put them in a sauce pan.
2. Add sugar and balsamic vinegar and bring to a boil for about 1 to 5 minutes
3. In the mean time sterilize some jars by washing it thoroughly with soap and hot water, dry them well then add some alcohol to sterilize, give it a shake, then pour the alcohol out (!)
4. Pour in the jelly and let is sit till its cooled off.

Note; If you would like to store them for a while it is important to seal the jar; after pouring in the hot jelly, stretch some cling plastic tightly over the jar, then close it with the lid.

Et Voila! Bon Appétit!
