From the Kitchen; Easy-peasy Pumpkin Hand-pies

Ok just a quickie before the holidays! It's for the busy-bees or the undomestic-divas. A cheat to make a scrumptious holiday dessert.
 What you need;
- Store bought pie crust
- Can of pumpkin puree
- Pumpkin spice
- Cream of coconut
- Cool Whip
- Brown sugar

1. Roll out your pie crust and with a cookie cutter cut circles 
2. Prep your pumpkin puree with the pie spice and brown sugar (taste and add till satisfied).
3. Drop a spoon-full of pumpkin filling (depending on the width of your circle)
4. cover with another circle and close with a fork. Cut an X on the top
Don't forget to pre-heat the oven.
Pop them in for +/- 15 mins or until golden
In the mean time, mix the coconut cream, but just the white solid bit not the oil. To separate this let is stand for a bit. Add pumpkin spice to your liking. When mixed well spoon it through cool whip. Warning! This stuff is deadly delicious!! 
Et Voila! Add a dollop of your coconut spiced, whipped-cream and devour!

Baking; Coffee Glazed Toffee Cakes

Here's a perfect and easy, yum! recipe for your Sunday....
Follow an (vanilla) cake-box recipe for the cupcakes, but add your own twist. 
>Mix one shot of a strong espresso and added that to the amount of water the recipe called for.
>Place a soft caramel chew in the center (do not push it in too much) 
>For the glaze, Mix; 2tbsp soft butter, 1/2cup confectioners sugar and 1 shot espresso
Topp 'em off with chopped caramels, Et Voila!

For the Undomestic Diva; Coconut Snowballs

This week is getting busier and busier leading up to Christmas, there is so much to do and still you want to make a nice treat in the spirit of the holidays. Well, here is where Duncan Hines, my dear friend comes in. Usually I like making cupcakes from scratch, but this time a little something for the busy bees and the undomestic diva's. 
What you'll need; 
-(French) Vanilla cake mix 
-Marshmallow Fluff
-Shredded sweetened coconut  
-Decoration (either store bought or self made)

Bake cupcakes, follow instructions on back (usually it's; add eggs, oil and water). 
Let them cool off after taking them out of the oven!!
Spread a spoon of fluff on, sprinkle the coconut shreds on, stick in your centerpiece (use toothpick and a printed out image stuck onto it)

Et Voila! your Coconut Snowballs are done! Caution; Sticky & Sweet, but oh so yummy!
