Breakfast at Fayme's in the Kitchen; Home-made Muesli

I love Muesli in the morning, filled with nuts and chocolate. However, if you make your own muesli, you know exactly how much you would like to have in there and you know how much sugar (or honey in this case) is added.
Instead of using regular chocolate chips, I used cocoa nibs, they are raw roasted cocoa beans, they are a bit more bitter, and crunchier and have an intense dark chocolate flavor, with regular chocolate making extra cocoa butter, sugar and milk is added, which honestly isn't too bad to swap in for an easy much more flavorful cocoa nib.

What you need;
- Rolled oats
- Nuts (I used macadamia nuts)
- Dried Fruit (I used chopped sour cherries)
- Honey (I used thyme honey)
- Cocoa nibs (optional)
- Cinnamon & Cardamom 

1. spread the oats on a baking sheet or oven dish together with the oats, the spices and the honey, stir them all together so they are coated evenly with the honey.
2. Pop it in the oven for +/- 10-12 minutes, take out, hustle, so they get toasty evenly, then pop 'em back in for another 10-12 minutes.
3. Take it out when it looks toasty, let them chill for 10 minutes, then break up the clumps, stir in the cocoa nibs and dried fruits, store in a airtight container.
Et Voila!! Your own home-made muesli, Enjoy!

Breakfast at Fayme's in the Kitchen; Makin' Ricotta

The weather has triggered me to stay inside as much as possible, these days.... I turn to the kitchen for comfort. Cooking, discovering new recipes and learning how to make your own stuff is what keeps me busy these days. I had a brilliant idea to make my own cheese, too bad I don't have my own cows to milk, however my uncle who lives on the east side of the country has a farm next door, where he gets fresh milk and other dairy products, since I had no clue where to get real fresh milk in this city, I asked him for a weird favor; "Please bring me milk from that farm I like going to", I begged him.... And so he did... 
And then I made ricotta cheese :)
What you need;
- Fresh, whole, unpasteurized milk (1.9 liter)
- Citric acid or concentrated lemon juice (1/3 cup)
- Strainer, cheese cloth and a saucepan

1. Bring the milk to an "almost" simmer. Take the pan of the heat source when the milk is about to boil, when it starts to foam.
2. Slowly pour in the lemon juice, stir and let it sit for 10minutes. You will see the milk curdle (doesn't look that sexy, but it will be delish)
3. Line a strainer with cheese cloth and pour in the curdled milk (if you like, save some of the access liquid aka the whey), let it sit for 10 minutes or however dry you like your ricotta, you can always add some whey to make it moist again.
Et Voila! Your very own batch of ricotta cheese!
Perfect for making lasagna on a Friday night!

Breakfast at Fayme's in the Kitchen; Spiced Pumpkin Bread

Tis the season for pumpkin everything! What I miss about being in the states around fall and the holidays is that everything is available in pumpkin spice flavor (my favorite!), here in the Netherlands not so much...
Me and my undomestic self made this spiced pumpkin bread (from a pack), but I am sure "this", "this", or even "this, gluten free" recipe is as easy and yummy if your determined for your spiced pumpkin bread :)
I did however make my own thyme honey cream-cheese, to slather on top once the spiced pumpkin bread is cooled off. add some fresh springs of thyme and some toasted pumpkin seeds on top.

Breakfast at Fayme's in the Kitchen; Farmers Market Breakfast

Good Sunday Morning!
I got these great fresh ingredients at the organic farmers market, perfect for the Sunday morning brunch!
What's on the menu? A lavish fall yogurt parfait.
I got some in season walnuts and pecans, thyme, thyme honey, and a pluot (it's a mix between a plum and an apricot, you could also use just a plum or just an apricot).  
Start with some thick yogurt (I use greek yogurt), then crack and chop the nuts on top, cut the pluot to go on top, sprinkle some fresh thyme leaves on top, drizzle the thyme honey over all of it...

Staycation....


Okay, don't you sometime feel like you just need to go on a vacation?! I was at that point that, you want to feel new adventures, get out of your everyday routine and just relax! 
But since most of us can't actually get away every weekend, here are some tips to have a wonderful staycation.
One thing I'm obsessed with lately is my Korres Shower Gel and Body Butter. They have absolutely wonderful scents, it actually reminds me of a tropical escape in a bottle (so wake up to that!). Korres is inspired by Greek Goddesses and was created by a Greek homeopathic pharmacist. Korres is natural and organic all plant and herb based. The ones I'm using now are Fig and Guava, but I cannot wait for them to finish to go get myself the coconut milk scent! In Amsterdam you can get them at Cosmania. 
When Stayationing at home, you want to be comfortable and you may spoil yourself a bit! Everybody deserves it, I think....
Get yourself an exotic plant or flower arrangement (plants make me happy, Dork!), My guilty pleasure is the latest fashion magazine, put on something on the record player and flip through like there is no tomorrow. Sip on herb infused water, it's so refreshing, especially in the summer heath. I like mint & ginger, or basil, but you can also throw in some sliced fruit, yum!
Spoil yourself with an at home mani! Soack your hand in luke-warm water (add some lavender or rose petals to the water), srucb your hands, and give them a color coat that reminds you of vacation!

And Last, make yourself an awesome breakfast omelette. They serve omelets at the cool hotel breakfast bars;), so invent your own deliciousness. I like my omelette fluffy, topped with avocado and salsa rosada (one part ketchup, one part mayonnaise, a splash of whiskey and oregano spices)

Instamania

Happy Friday! I have been quite occupied the passed week and have neglected Breakfast at Fayme's, however for those who follow me on Instagram could have kept up, for those who don't follow me yet here is a little sneak peak of my week...

Happy Easter Inspirations

 Easter is an excuse to eat, eat and eat some more.... for me it is really about spending time with family and friends (while eating). Last year we hosted 2 brunches (first and second day of easter) the year before that we had a lovely easter picnic in the park, this year we will probably end up brunching inside since it is still cold out! 
What will you be doing this easter?
Below I share some inspiration for an easter brunch!
1. Make fresh fruit mini pavlovas
2. Wrap your sandwiches nicely for a picnic
3. Serve fruit infused water
 4. Serve koffie in jars and have tulips (very Dutch, very spring)
5. Simply glue on sequins for chic egg decorations
 6. Have brunch outside (if the weather permits)
7. Chalkboard eggs for some fun interaction and craftiness 
 8. Bake with easter candies
9. Tie fresh herbs or flowers to an egg for a fresh original centerpiece
 10. Hide a sweet message in an egg for your loved ones
11. Use fresh fruit and pastel colored flowers for center piece
12. present your flowers in halved and decorated eggs in a egg carton

Breakfast at Fayme's in the Kitchen; Sunday Brunch

Happy Sunday everybody! It's time to stay in bed and cozy up. 
Get out of your regular breakfast routine and change it up by serving your coffee in reused glass jars. And instead of regular cheese mix it up with brie and jelly and old Amsterdam gouda cheese with candied ginger, YUM!!

Breakfast at Fayme's; Most important meal

Breakfast is the most important meal of the day.... To confess the truth, I skip it too often. When I do get the chance I like to spoil myself with a delicious breakfast, because it is my favorite meal time.
