No-bake Nutty Coconut and Date cookies

Ok I have a serious sweet tooth and if I want I can bake a batch of cookies whenever I like and eat them too! These are an healthier take on something sweet, packed with protein naturally sweet and filling, so you'll only eat one at a time (maybe).
What you need;
-Sticky dates
-Nuts (pecans, almonds or macadamia)
-Unsweetened shredded coconut
1. Pop the dates in the food processor first, then add the nuts and shredded coconut
2. I just made them by feeling the "batter", when crumby and sticks together when pressed, it's good.
3. You can make balls, patties or bars which ever you like best!

Salmon Tartar

Happy Monday! For those who follow me on Instagram, might have seen this dish come by somewhere last week. This recipe I got, inspired by a young chef I know in Spain. It was not the same as when he made it, but I did quite impress myself with this one. 
It's as easy as 1, 2, 3!
What you need;
Fresh filet of salmon 
Cherry tomatoes
Firm yet ripe avocado
Fresh Chives
Drop of olive oil
Some fresh (fruity) vinegar
White pepper
1. Cut everything up into little cubes and snip the chives in
2. Add the drop of olive oil, vinegar and white pepper to taste
3. Scoop it into a small spring form ad slightly press it down
Et voila! Your Salmon tartar ready to be served
note; serve by itself as an appetizer or with a side of fresh pasta as a main

Home-made Tomato Soup

I learned this easy, easy recipe from a friend from work. We always end up talking about food and she gives me the best vegetarian recipes and ideas! Thanks Caroline ;) 
What you'll need;
Some tomatoes
one or half an onion
Bit of garlic
Vegetable stock
Optional; Can of white beans
1. Sauté the onion, garlic and tomato (take out the core) 
2. Add some seasoning (italian or all seasoning) 
3. Once the tomatoes look soft and the skin seems to let loose a bit, add the stock
4. Once its cooking, you will be able to fish the skins out
5. Puree the soup with a blender or food processor, after add the beans
6. Before serving, top soup with some balsamic vinegar, heavy cream or grated parmesan 
Et Voila! Your home-made tomato soup!

Fresh Pasta Cooking

Last weekend we went to a "fresh pasta" cooking class. We made the pasta from scratch, linguini, tortellini and ravioli. With a filling of spinach/ricotta and parmesan cheese. It took us all afternoon, you have to do a lot of kneading and carefully getting the dough as thin as possible. In the end it is so yummy and so worth it! I highly recommend to either take a pasta cooking class or to find a recipe online and just give it a go! 
 Oh and I got some cute ideas from this cooking place!
> Get (hermetic) jars to store cooking products in, simply paint a little swatch with chalk-board paint and label the product (image above)
> Plant herbs in medium rustic pots and let them grow into little herb bushes (first image)
2 easy sauce recipes;
1. Burro e salvia - Melt butter (enough for a sauce) in a little pan, add fresh sage, a little garlic is optional. Done!
2. Aglio, Olio e Peperoncino - chop garlic, a red peper (seeded) and parsley. heat olive oil in a pan, add all finely chopped ingredients and cook till almost a bit brown.

Et Voila! yummy sauces for your fresh pasta!
