No-bake Nutty Coconut and Date cookies

Ok I have a serious sweet tooth and if I want I can bake a batch of cookies whenever I like and eat them too! These are an healthier take on something sweet, packed with protein naturally sweet and filling, so you'll only eat one at a time (maybe).
What you need;
-Sticky dates
-Nuts (pecans, almonds or macadamia)
-Unsweetened shredded coconut
1. Pop the dates in the food processor first, then add the nuts and shredded coconut
2. I just made them by feeling the "batter", when crumby and sticks together when pressed, it's good.
3. You can make balls, patties or bars which ever you like best!
Et Voila! Your no-bake nutty, coconut and date cakes

Tropical Tablescape

As fall is creeping up on us, I will share an easy, cheery DIY for the home. A tropical floral napkin ring, that will make your tablescape feel like the tropics.
What you need;
- Some good looking faux flowers (I had never seen faux bougainvilleas and got them in Hawaii, but any flower works really, even a nice fall flower like a faux dahlia)
- Napkin rings ( I liked to go with the look, feels tropical)
- Gold wrapping/binding wire
Simply string the flowers through and wrap the wire around the napkin ring. (you could use a glue gun as well, but the gold gives it a cool touch, I find).
Et Voila! your tropical tablescape is awaiting you and your guests!

Stuffed Bell Pappers 4 Ways

Happy Monday
On request of an old friend of mine, I share this recipe.
Bell Peppers are awesomely versatile, and the variety of colors and tastes that they come in! They are summer vegetables, so get your hands on them while you still can!
A fun way to serve your dinner is, by stuffing the bell pepper either if your having dinner alone or with friends!
You can basically stuff it with what ever you like, but here are some tips;
Latin; black beans, coriander, rice or quinoa, queso blanco (white cheese)
Greek; tomatoes, olives, feta, quinoa
Middle-Eastern; cous cous, ground meat, raisins, dash of cinnamon (it's deeelish!)
Mexican; chili con carne topped with cheddar

It is also a fun alternative in case you have left overs. For example yersterday I made a Latin inspired bell pepper with left over black beans
Simply cut the top off, take out the seed part.
fry your veggetables and cook either your rice, beans or quinoa or cous cous etc.
Make a mixture with all ingredients, stuff the pepper and pop in the oven.
Pre heat the over, set to 180*C and leave in for 15-25 minutes
Et Voila! Bon Apetit!

Smore S'mores

It feels like summer almost over, days are getting shorter, winds are picking up and fall collections are on display in the stores windows.
Today I woke up to raindrops on my window and I'm not complaining (just yet), Fall is always so cozy and time for inside activities. If you have not gotten the chance to BBQ one last time, you have not had your S'mores fix. This cake is a take on the oh so yummy summer S'mores.
1. Bake a double chocolate cake and cut into two layers. You might have to bake two cakes and then stack 'em.
2. On one layer spread out marshmallow fluff (note; only spread in the middle, not till the edge, the weight of the cake will spread it out)
3. Another layer with double chocolate icing and chunks of graham crackers.
4. Finally ice complete cake and decorate with crushed graham crackers and mini marshmallows.
Et Voila! Your S'mores inspired cake ready to be devoured!

DIY; Update the Kitchen Towels

 An easy DIY up-do for the kitchen. I found these cutie iron-on patches at the Monday market (fabric market). It has anything and everything for sewing and crafting, you can imagine I go a little crazy there.
The patches are user friendly, simply iron on! I thought the fruit/veggie theme would look cute on tea towels and so I updated some I already had!
